The buffering property of the sodium lactate powder is to keep the neutral environment of pH ≈ 7, so
as to reduce the cooking loss of meat products.
The growth of microorganism is inhibited by reducing the water activity of the product, and the
preservative effect is little affected by pH value.

colorless or yellowish powder, with mild and special salty taste.
